Made from the dried starch component of peeled potatoes. It is a very fine white powder starch, has no potato flavor and hence work well many recipes. In baking, it lends a light and fluffy texture. In cooking, it works like cornstarch, for general thickening, binder or anti-caking agent. Great for people who has corn allergy or those who prefer a grain-free diet.
